While checking my Flickr account today I noticed that I received a nice comment from Erik at Vegan.com. Erik featured one of my recently uploaded pictures from my Walt Disney World vacation on the Vegan.com. I was super stoked to have one of my pictures featured on his site. I consider Say It’s Not Soy to be my baby and I get excited when other people enjoy the content I am featuring (whether it be on the blog, twitter page, or flickr account). Thanks for the feature Erik! Check out the feature here: http://www.vegan.com/blog/2009/05/27/vegan-hummus-wrap/

Also I wanted to do a mini update to let everyone know that I am working on drafts of several different blog posts to highlight my vacation that I took last week to Walt Disney World. I plan on highlighting my favorite vegan meals and snacks as well as tips for other vegans going on vacation to Walt Disney World. I also have a special surprise that I am working on showcasing soon too (I’ll give you a hint; I’m developing my first iPhone web site). So be on the lookout for some fun updates

Last night I went out to dinner and a concert with Diggler and Smack. We drove over the hill to Santa Cruz and had dinner at the Saturn Cafe. Usually when I eat at the Saturn Cafe I order their loaded nachos or stacked burgers. I decided to go with the Peanut Royale (tofu and veggies covered with peanut sauce over brown rice) to change things up. Overall it was a pretty decent meal but the peanut sauce was a bit watery for my taste and it could have stood to have more ginger in it. Our waitress surprised us with a funny drawing on our check; meow!

After dinner we walked a couple of blocks down the street to the Catalyst and saw the Devil Makes Three. This was my first time seeing them and they were pretty great. Although I still alittle bit shocked that at one point the crowd was moshing to their music (who moshes to ragtime/country/dirty south type music?!?!? Apparently Santa Cruz does.)

This last weekend was a pretty busy one. Hanford went on a mini boys road trip with our mutual friend Mark; so Hanford and I did dinner together Thursday and Friday night. Hanford and I hit up Whole Foods on Thursday and I bought a bunch of vegan food I shouldn’t have (vegan chocolate cupcake from the Bakery, Nut Brown Ale, and vegan cookie dough ice cream). I cooked us a meal of homemade biscuits, gravy, mashed potatoes, and asparagus (not pictured because we at most of it as soon as it was done). During the weekend I had derby and school commitments but Hanford and I were able to meet up late Sunday night. Hanford, the rad boyfriend that he is, brought me home a slice of Native Food’s vegan carrot cake. It was a nice treat for Monday morning; although I prefer the carrot cake I make (mine has raisins, nuts, and chunks of carrot in it). Despite the carrot cake not being my favorite; Native Food is one of my most favorite restaurants in Southern California (try their “Run, Chicken, Run” sandwich; it’s my favorite).

I have been so annoyed with myself since I haven’t updated this blog in almost a month. The truth is I have been overwhelming busy between work, school, and roller derby. Work eats up my weekdays, school takes up a couple of nights a week, and roller derby wants to control whatever time is leftover. Poor Hanford (my boyfriend) has to fit in there too. It’s no surprise to anyone that knows me that roller derby take up a ton of my free time. In the span of the past month I have coached two bouts, attended a double header, and have been planning for the Silicon Valley Roller Girl’s first double header (May 2nd at San Jose Skate in San Jose). In between all my activities I have managed to squeak in some much need time in the kitchen.

Here are some quick updates for April:

I ordered a beautiful new apron off Etsy! Natalie at bakeanddestroy.net held an Apron Deathmatch on her blog and I instantly fell in love with the style of Boojiboo’s Aprons.

I made a wonder pumpkin pecan loaf of bread for a trade that I did with one of the ladies I coach. I traded her the loaf of bread for some white caps for my knee pads (my black ones mark up the rink).

For Easter I indulged myself with a chocolate assortment box from Choco-a-go-go. The box came with an assortment of truffles and was pretty amazing! I also ordered a peanut butter filled chocolate bunny (not pictured).

Also for Easter, my parents surprised me with an awesome Easter basket filled full of dried fruits, vegan gummy candy, almonds, and pez. My parents were out of town on Easter and hid the basket in their hall closet. When I went over to their place to check up on their cats my mom texted me to let me know that they hid an Easter basket (I felt like I was 5 again).

Yesterday Molly Mayhem (aka kitchenmayhem.blogspot.com) had her Birthday BBQ. Molly has been my friend for a couple of years and we first met when both skated for the Bay Area Derby Girls (we have both since retired from that league). Last year her and I celebrated her birthday by having a wonderful picnic on Angel Island . This year Molly’s friend Becca hosted a BBQ at her house in San Francisco (cute house with a great backyard near Haight/Ashbury). The weather was really nice (by San Francisco standards) and it was a great day to BBQ. The BBQ was a potluck and there was lots of awesome vegan food. Here is the vegan food that was brought:

“No-Crab” Crab Dip with crackers

Spring Rolls with Tofu

Grilled Veggie Kabobs

Grilled Eggplant Baba-ghannouj

Spicy Peanut Pasta Salad with Veggies

Bell Pepper Salad

One step closer to it being summer; my favorite season. The above picture is one of the trees in my front yard. I’m not sure what type of tree it is but the petals remind me of French vanilla ice cream.

To celebrate today being the first day of spring I’m going to offer some BBQ advice. Hanford and I BBQed last weekend and he showed me a trick for how to grill onion or pineapple without it getting nasty. It’s a simple trick of putting two skewers through the onion/pineapple to make sure you and can grill it evenly. Simple trick but it works great. I can’t wait for the weather to be nice all the time so Hanford and I can grill more!
