Irish Soda Bread

I have always enjoyed St. Patrick’s Day; not just because of the green beer. My family on my Father’s side is Irish; so I grew up having wonderful family gatherings every St. Patrick’s Day. The cute little wall hanging pictured above was my Grandmothers’ and she was the one behind most of the cooking at these gatherings. My Grandmother passed away many years ago and since then I have become vegan; so my St. Patrick’s Day are very different than they used to be. Most people associate corned beef as the staple of St. Patrick’s Day; I can say that I was never really into it and I certainly don’t miss it . There are so many Irish recipes that are easily made vegan. This year I decided to have dinner with my parents and I made Irish Soda Bread to share. I also cooked cabbage, potatoes, carrots, and an onion in Better Than Bouillon’s savory broth. Dinner was so yummy that I forgot to have a green beer!

Vegan Irish Soda Bread
Prep time: 1 hour
Yields: 1 medium sized loaf
Preheat oven to: 375degrees Fahrenheit

Ingredients

  • 1 cup of soymilk
  • 1 Tb white vinegar
  • 3/4 cup and 1 TB whole wheat flour
  • 1 3/4 cup of unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1 Tb baking soda
  • 1 1/2 tsp Ener-G Egg Replacer
  • 2 Tb water
  • 2 Tb Earth Balance,vegan butter (softened)

Instructions

  1. Preheat oven to 375degrees Fahrenheit and grease a cookie sheet with non-stick cooking spray. Combine the soymilk and vinegar together then set aside. In a separate bowl, Whisk together the Ener-G Egg Replacer with the water. Whisk it until it is foamy then set aside.

  3. Combine white flour, baking powder, baking soda, and 3/4 cup of whole wheat flour (you will use the extra 1 Tb later). Soften the Earth Balance and then add to the dry ingredient mix. After that is mixed together then add in the soy milk/vinegar mixture and the Ener-G Egg Replacer mixture. Knead all the ingredients together until they are uniformly mix and then shape into a oval shape. Use the 1 Tb of wheat flour to coat the outside of the dough ball. Place oval dough ball in the center of your grease cookie sheet. With a sharp knife score a swallow “X” into the top of the dough ball.

  5. Bake in oven for approximately 30 – 35 minutes (or until the crust is brown in color and the bottom is browned). Serve with cooked cabbage, potatoes, onion, and carrots.
